David “Duck” Anderson’s simple recipe for this exceptional wine consists of rigorous yield restrictions, perfectly aged vines and a good nose for the ideal harvest time and aging in barriques. What comes out of it is very impressive: a dense, lush and characterful Shiraz in a class of its own with a never-ending finish. The fact that it is also harmonious, elegant and has a very high aging potential is nothing short of a miracle. No wine with bread and butter, but with a hearty piece of lamb fillet with pecan sauce or a venison schnitzel with porcini mushroom sauce.
