After fermentation, the wine matures in oak barrels for seven years. During this time, up to 40% of the liquid evaporates, which must not be refilled. This cavity in the barrel creates a natural, protective yeast floret on the wine. This gives the wine its unmistakable aroma. The bottling takes place in bottles with a content of 620 ml (this bottle shape is called Clavelin), which is the amount that remains from a liter of wine after evaporation during the maturation period and delivers a dry delight for connoisseurs.
